Cocoa Roasting & Product Development
Our roastery roasts coffee, seeds and nuts. We have done some inital roasting of cocoa beans, and made cocoa nibs and cocoa powder. This work is will lead to our plans for manufacturing cocoa powder and cocoa butter on commercial scale.
Cocoa Beans
We work directly with farmers in Morobe and Sepik regions to produce dry cocoa beans. These cocoa beans are prepared and exported to cocoa buyers overseas.
For roasting and product development, we select cocoa from specific regions, roasts and develop product and their quality profiles. Some roasted cocoa products that we have done in our roastery are nibs and cocoa powder.
Cocoa Products
The main processed products are:
1. Cocoa nibs
These are the roasted whole cocoa beans after removing the shells.
2. Cocoa powder
The ground powders obtained after grinding the pressed cake and separating the butter.
3. Cocoa butter
The paste/spread obtained after pressing the cocoa cake.
